This is sooooo easy and great for a cold night or when you need comfort food!
* I left out the egg - since Harper is allergic so I think you could too - it was GREAT without it.
Ingredients
- 2 cups chopped cooked chicken breast
- 2 hard-boiled eggs, sliced
- 1/2 cup thinly sliced carrots
- 1/2 cup frozen green peas
- 1 (10 3/4-ounce) can cream of chicken soup
- 1 cup chicken broth
- Salt and pepper, optional
- 1 1/2 cups instant biscuit mix
- 1 cup milk
- 1 stick melted butter
Directions
Preheat oven to 350 degrees F.
In a greased 2-quart casserole, layer the chicken, eggs, carrots, and peas. Mix the soup, chicken broth, and season with salt and pepper, if desired. Pour over the layers. Stir together the biscuit mix and milk, and pour this over the casserole. Drizzle butter over the topping. Bake until the topping is golden brown, 30 to 40 minutes.
looks delicious, but that is chicken PIE my firend, chicken pot pie is noodles potatoes and chicken in a thick chicken gravy...PA Dutch at it's finest! :)
ReplyDeleteGirl Friend! Shut your mouth!!! hahaha! This sounds delish! I'll be putting it on my list for next week.
ReplyDeleteKAL071203:
ReplyDeleteThere must be different versions depending on where you live - but in the south - this what we called chicken pot pie. :-)
I'm a huge fan of this recipe, I've been making it for about 6 months now and it's always a hit! The biscuit topping makes it so yummy.
ReplyDeleteI am a little put off by the hard boiled egg part.....Did you notice them in the recipe? I can't figure out what the taste/texture would be! I have seen her make this on her show and it looks yummy, but I laways hesitated with the eggs!
ReplyDeleteMy mom makes a similar version that we call "Chicken Pie" because she leaves out the veggies. She does include eggs in it, and I've never noticed it being an overwhelming taste. I will definitely be trying out this version for my first attempt at making Chicken Pot Pie. Thanks for the recipe, Kelly!
ReplyDeleteWOWSERS! That sounds delish! I think I'll make it tomorrow!
ReplyDeleteThanks Kelly... We must have the similar pallets because I love all of your recipes!
I was wondering about the eggs, also. Do you think it would still be good without them?
ReplyDeleteI was just going through your recipe sight and saw that you share the love for Ro-tel!!! And I actually just finished making one of our favorite dishes with ro-tel! It's a chili... but more of a taco chili! It's awesome! You should definitely try it! (but I think the recipe is too long to leave as a comment! I will have to email it to you! :) The chicken pot pie looks great too... but I am not so sure abt the eggs either!! Have a great day!
ReplyDeleteYummy!!
ReplyDeleteI'm so glad you posted a recipe again. I check almost everyday!
Angie...I think Kelly said she left out the egg and it was still great!
MMMM...sounds Delish! And Kelly, I'm with you...I've always known this combo as chicken pot pie as well! Thanks for sharing!
ReplyDeletethis is totally my go to recipe. with little kids in the house we always have just a small amount of "leftover veggies" in the fridge. sometimes i use ready made pie crust, and all my leftovers (potatoes, corn, carrots, green beans, peas, whatever) and it is great!!
ReplyDeleteChad came home and said, "Ash, you have to make what Kelly posted today"! HAHA! He's so cute.
ReplyDeleteIm going to make it next week!
Yum! We also have a recipe from a dear friend for a chicken pot pie type dish. She made it for us on the night we came home from our last D & C. It was great!
ReplyDeleteWe make it in our crock pot and it's basically the same :) YUMMY!
Oh my this looks amazing and so easy. I'll have to try is tomorrow. Tonight I made Paula Deans Squash Casserole, gotta love that woman :o). Thanks for always posting such yummy meals!
ReplyDeleteKelly,
ReplyDeleteI have this on my list to try already I saw it on Mommy's Kitchen blog too. I bet it's yummy.

Scary! I just copied this recipe tonight to make tomorrow night and 20 minutes later I read your blog...great minds think alike!
ReplyDeleteok I love in Australia What is instant biscuit???? do you mean a pastry?

Leonie
I love this recipe, I use it all the time. I change it up for our tastes though.
ReplyDeleteLooks good, minus the egg. Is that a southern thing--putting a boiled egg in your pot pies? I've never heard of it.
ReplyDeleteI love Paula Deen and own all of her cookbooks and magazines!!! I cannot wait to make the hot dog bites for kids!!! The recipe is in her latest magazine!!! Yum!!!
ReplyDeleteI was just looking for an easy Chicken Pot Pie recipe! Thanks!!!
ReplyDeleteWonderful! My parents are coming in town tomorrow and this looks like the perfect thing to put together for a quick dinner.
ReplyDeleteGreat! I have been wanting an easy chicken pot pie recipe, Thanks! Next on my list is to look for a good, EASY chicken & dumplings recipe. Need help on that one=)
ReplyDeleteLooks so yummy but I need to figure out a substitute for the peas...yuck. Hmm, maybe green beans.
ReplyDeleteKAL071203, what you are talking about we call that chicken ala king in the north. Kelly we call your dish pot pie in the north too.
Can't wait to make it!
Kelly - I'm so glad you posted this! I've been wanting to try this recipe forever, but I was a bit skeptical of how it might turn out since I consider myself a chicken pot pie purist. I made it last night (also minus the egg) and it was so good!
ReplyDeletemumof2/Leonie,
ReplyDeleteI think that the instant biscuit mix means Bisquick, which is a baking mix for making pancakes, waffles, biscuits, etc. Maybe there's something similar in Australia.
S.
Kelly,
ReplyDeleteLooks delicious. Can't wait to try it!
I noticed your Ice Cream recipe with no eggs. Here's another one for you to try that is really yummy! I remembered the old traditional Orange Crush recipe and began experimenting. Here's a Vanilla I came up with and it has become my family's new favorite.
2 Liter bottle of Cream Soda
3 Cans Eagle Brand Milk
2 Tbls. vanilla
Mix and freeze in your electric ice cream freezer. Super easy and delicious!
Variations include -
Strawberry: Use Strawberry Crush and add (thawed and mashed)10oz. pkg. of frozen, sweetened strawberries
Peach: Use Peach Nehi Soda and add a Lg. can peaches w/juice, chopped
Enjoy!
Thank you so much! I made this on Thursday night and my 3 kids each had 3 helpings. I have made Paula's other pot pie recipe and it was wonderful but this is just as good and so much easier!
ReplyDeleteI made this recipe this weekend after seeing it on your blog last week and woohoo it was delicious! I loaded it with more veggies, but it came out perfect! My husband loved it and it has not been placed on our monthly recipe roll! Thanks Kelly!

ReplyDeleteMade this tonight and it was divine. I love Paula Deen!!!! I won't add the egg again next time though. It was really rich.
ReplyDeleteno need for the egg. tastes just as good without. might want a tad bit of thickening agent. love the topping. "yummo"
ReplyDeleteSee and this is the reason I love Paula Deen, she knows and uses cream of crap. IE chicken, mushroom, celery etc. THis is my dinner tonite thanks to you!!!! I cheated and used veggie mix in the can cause that is what I had on hand!
ReplyDeleteI'm sure since it sounds sooo good- it's got to be completely fat free!
ReplyDeleteWork from home India
I found this from Paula's site and made it recently - yummy good! My husband doesn't like chicken pot pie but he ate this and wanted to make sure I could make it again!
ReplyDeleteOH MY! That was the yummiest dinner I have had in a long time! It is my all time new favorite! I can't believe how easy and how good it was! We have an egg allergy at our house too so we left out the egg.
ReplyDeleteTried this tonight and it was delicious! My 2 year old even ate it...well, everything but the peas and carrots!! :-)
ReplyDeleteThanks so much for posting these recipes.
