INGREDIENTS:
3-4 chicken breasts, boiled and cut into bite size pieces
1 can cream of mushroom soup
1 can cream of chicken soup
1 can rotel
1-2 cups cheddar cheese
Package of corn tortillas (small)
Tear the tortillas into small pieces and line the bottom of a pan. Mix together the soups, rotel and chicken and pour on top. Top with cheddar cheese. Bake at 350 for 30 minutes or until cheese is bubbly. Seriously - it's that easy!
I usually serve with spanish rice (just a rice-a-roni mix) and/or a green salad
I love this recipe too! Mine also calls for chopped onion and green pepper. You saute them for a few minutes in the frying pan and add them to the chicken, soup, and rotel mixture. It adds a few more veggies and in reality you could all whatever you wanted...red peppers, mushrooms, etc. Just a variation!
ReplyDeleteIn my variation of this I use cheese Doritos instead of the tortillas. It really adds some flavor and texture. I put a layer on the bottom and then when there is about 3 or 4 minutes baking time left I add a layer on the top. Just watch them because the ones on the top will burn quickly. This is a great recipe!

Guest was pouring the soup in a bowl and Martha said "what is that yellow stuff", guest said "cream of chicken soup" Martha said "you are kidding me, I have never seen that before" I nearly fell over!!! Never seen cream of chicken soup? It was so funny.

ReplyDeleteMade this tonight for the family. Loved it!! Have to admit I had to look up what the heck Rotel was on the internet....and formulate my own with the stuff I had in the cupboard. My 10 year old is not a fan as it took him over an hour at the dinner table to finish!! Oh well, can't please them all.

Kelly, it cracks me up that a lot of people don't know what Ro-tel is (I get that a lot on my blog, too!). It's such a staple in our house, I don't know how anyone can cook without it!! This dish is a regular in our household. We just had it the other day, in fact : ) I like to use flour tortillas with mine (I'm not a big fan of corn tortillas)...I also like the idea of using Doritos. I'll have to give that a try sometime!

As a South Texas girl I was raised on King Ranch Chicken. An easy variation... grab a rotesserie chicken and just shred it. I use flour tortillas instead of corn tortillas. I've also subbed ground beef for the chicken and it's really good!

The only variation we're doing is that we're cooking the chicken in a crockpot with cream of chicken soup and cheddar cheese soup (instead of mushroom) and then shredding it!

ReplyDeleteI made this the other night. I put all the liquid ingredients in the crock-pot along with chicken that I browned first on the stove. I also added a can of enchilada sauce. I let the chicken cook all day and then transfered it to a baking dish- adding the tortillias and cheese. It was sooo good!

I use:
1 can cream of chicken
1 can corn
1 can peas
1 can cream of celery
tortilla shells (cut into medium size hearts) yes corny i know
1 bag of Mexican cheese
1 can rotel
I mix it all up in a bowl layer the dish w/ the heart shaped tortillas, fill it up with the mix, then add one layer on top of the hearts, and finally add some cheese.
I usually make cherry cobbler for dessert to compliment the yummy taste :)

ReplyDeleteOh, my goodness, would y'all just tell the Northerners...Rotel is canned tomatoes and green chilies. It's a Texas (and I guess Southern) staple. If you can't find Rotel, use a can of diced tomatoes and a can of chopped green chilies. You'll get more veggies, but that is a good thing! Theoretically you could also use a jar of mild salsa--I think the Rotel can is about 12-13 oz, so just use equal measure. I grew up on King Ranch chicken...it's a meal that saves the mama's life. :)

ReplyDeleteFor those of you asking, Rotel is a brand name of a soup sized can of diced tomatoes, green chiles, and the juices from them. It is a very popular thing here in the South and is used in so so many different recipes. The most popular and one of the oldest recipes that uses it is actually referred to as Rotel, which is a 1 pound block of Velveeta cheese melted together (usually in microwave, stirring every 1 minute or so intervals) with a can if Rotel to make a queso/cheese dip. That's the basic base...from there some people add cooked ground hamburger meat or sausage, spices, other cheeses, etc...the possibilities are pretty endless. Most of us Southerners grew up on Rotel cheese dip! In grocery stores, Rotel is found on the aisle with canned vegetables, specifically with other canned tomato things (stewed tomatoes, crushed tomatoes, etc.). Most major grocery stores (around here at least) have a generic version...it will just say diced tomatoes and green chiles on the label. Hope this helps!

I did a layer of chips, Mexican blend cheeses, half of the chicken mixture, tortilla chips, Mexican blend cheeses, other half of chicken mixture, tortillas chips, and then topped it off with the Mexican blend cheeses.
