Roast

One of my favorite meals and biggest comfort foods is roast, carrots and potatos. I've been making this for the last 15 years and I don't have a specific recipe - I am always changing and evolving how I make it in search of the perfect one!

The way I have made it recently that has turned out really great is :

I use rump roast - I heard that it's the most tender and it really is. It's never tough. I also use the small red potatos. And the small carrots.

I put all of that in the crockpot with a package (or two) of dry onion soup mix. Instead of water - I use beef broth to fill it up. You could dilute it with some water if that seems too salty.

I cook it for around 8 hours on low. This results in tender meat also!

You get a very moist roast with GREAT flavor.

In the past I used cream of mushroom soup but I like it this way much better.

That sounds good. I never thought of beef broth. My recipe is very similar, but it's coke instead of the broth. I am going to try yours! Hope you are well.

Honest to goodness, I was just telling my husband that I am really craving roast lately but I have never been able to make a nice tender one. Sure, there's plenty of juice in the pot, but the roast itself turns out dry and chewy. My husband is extra picky about that so I am really anxious to try your recipe. Thanks so much for the tip on the meat cut....I know so little about beef!

THANK YOU!

Your recipe is pretty similar to mine. I also like to throw in either pearl onions or onion slices and sliced bell pepper if we have it at the time.

how long did you cook it for?

Yummy! I will have to try this. I'm trying Emeril's roast recipe this week, so I will make yours and then compare! :)

How long do you cook it and on low, med or high? Looks yummy! Thanks for sharing.

Sounds great! How long do you cook it for and on what temperature? I am new to crock-potting so do you cut the roast or put it whole? How much broth do you put in? I guess I can just eye-ball the potatoes and carrots.

I cook mine in a similar way, and it is SO delicious! But I use two cans of French Onion Soup, similar to your dry onion soup and broth. The onions pretty much disintegrate, and there is plenty of juice to make a delicious gravy. I also use an arm roast. I "think" they may be cheaper, but the long, slow cooking (8 hours on low or 4 hours on high) makes it totally fork tender! I usually brown the roast before putting it in the crockpot, just to add to the flavor.

I'm laughing because I JUST put a roast in the crock pot!!!!! I like to cook mine all night and all day. :)
I do the same, only tonight I just dumped water in it instead of broth. When I opened the freezer, a pork loin jumped out and landed on my ankle....so I was just dumping it all in the crock so I could sit down! For goodness sakes, maybe my freezer needs rearranging?!?!?!?!
Can't wait for dinner tomorrow! Have a wonderful evening....

That sounds wonderful! I am trying the Homemade Gourmet seasoning pack with mine this week. I usually just throw the roast and some onions in the crock pot and turn it on. I love a roast with brown rice on the side which is super easy and is the most requested dish at holidays, well that and pineapple cheese casserole. I will have to try this recipe next! Thanks Kelly and congrats on baby H!

Looks delicious! I used to use onion soup mix, but my friend makes the most delicious roast with an au jus seasoning. It's the McCormick packet and it's so good! Try it-you'll love it! It is a little salty, so you'll want to use plenty of water.

That looks so yummy!
I mix a packet of onion soup/ dip mix with a can of cream of mushroom soup, pour it over the roast and then pour half a can of coke (diet, cherry, even dr. pepper works!) I usually use 2 cans of soup because I love the gravy.
It's amazing over mashed potatoes.

I do mine very similar (like most of the people here!) but I brown mine on the stovetop first in a little olive oil on all sides, then put it in the crock pot and put salt and pepper on it. I smoosh the salt and pepper in with the side of a spoon as best I can and then pour the beef broth in. I don't use any onion soup mix. I use the small carrots and any potatoes I have on hand, even baking potatoes cut up and thrown in there!

So yummy! I too have been making that roast for 10 years using exactly everything you use even the mushroom soup mix. Sometimes I add 1/2 more cup of water, then garlic powder & pepper to the meat before I cook. Here's something a friend of mine suggested for leftovers. Make gravy if you don't normally (2-3 cups hot drippings from crockpot, then add 2 TBS Corn startch mixed with hot water and shaken for a few minutes....stir in and this will thicken while cooking on low to a gravy). It's good on roast, potatoes, everything and if you've added extra mushrooms you can throw those in. Next day.....saute butter in pan and add 1/2 chopped yellow onion, cook til soft. Add 2-3 fresh garlic cloves, add your reheated gravy...can also add a dash veggie, chicken or beef broth. Once garlc soft, add chopped roasted red peppers and chopped lefover pot roast (don't heat frst just chop right from your fridge leftovers). Saite all above in pan, then add Monterey Jack cheese til melted. Divide up and place in wrap (4-6 wraps),roll up and then place on baking sheet in 200 degree oven for about 10 minutes just to heat. Serve with garden salad. My husband and our three year old triplets love it served with ketchup and ranch dressing for dippin' as we say in the south!
