Okra and Tomatos

I love okra - so I found this recipe and tried it out and it was really good! It makes a great side!

Ingredients

  • 4 slices bacon, diced into small pieces
  • 1 small onion, peeled and chopped
  • 2 cloves garlic, minced
  • 2 (15-ounce) cans diced tomatoes
  • 1 tablespoon chicken base (I didn't have this so just used a little chicken stock)
  • 1 tablespoon sugar
  • 2 cups fresh okra, cut into 1-inch pieces (may use frozen, if fresh not available)
  • Fresh ground black pepper

Directions

Cook bacon slightly. Saute onion and garlic with bacon until tender. Add tomatoes, chicken base, sugar and pepper. Stir well and let simmer for about 20 minutes. Adjust seasoning if needed. Meanwhile wash okra and remove fuzz if using fresh and cut into pieces. Add the okra and simmer until okra is done, about 20 more minutes (less if using frozen okra.)

ok I read your other blog like crazy - I know you aren't running a country or president of a fashion company but you are so genuine and real I really appreciate it. Anyway so I was watching Fresh Prince of Bel-air yesterday and Will's grandma MADE this dish- I had never heard of it since I am Yankee through and through BUT it's crazy cus I just heard about it...I am gonna try this..I just have to find somewhere that sells Okra! take care KELLY

kelly, great recipe!!! i took it and turned it into a main dish by browning ground beef (and a little bacon), adding some flour to thicken the juices, put it in a dish, topped with mashed potatoes and, voila, southern girl's shepherds pie! i always make dinner early so it's ready when my kids (5, 3, 1) get home from school or camp. i did cut up the okra smaller to make it less identifiable. my youngest boy and girl eat everything but my big guy, oh he's a booger. thanks for the inspiration!

Put the okra (after cut up) in a ziploc of cornmeal and then shake off. It will give you a little crunch. Oh, so good!

I made this recipe tonight with the fresh Okra we got from our CSA. It was fantastic!!! Even my 3 year old and 20 month old ate every bite of it! Thanks for the recipe!!

I LOVE LOVE LOVE okra (my mama is from Texas) but live in CO, so can't get it fresh :( I do fix it FRIED from frozen once in a while and it's SO good. I'm jealous of all you southern girls that can buy it fresh...But hey, I'll take what I can get!

I cook fresh okra every summer because I raise it, BUT how do you get the fuzz off. Scrub it? Never heard of having to get it off before. Thanks for sharing!

This is also really good if you add some corn to it. I make mine super simple, a can of diced tomatoes, a can of low sodium corn and some cut up okra (fresh or frozen). Simmer until okra is cooked. I love this! I bet you could easily make it into a main meal too with some shrimp and pour it over a little rice!

I do a recipe similiar to this too. I is YUMMY!! Kelly - since you love green beans (if I remember correctly - {I love your chicken with lemons and green beans!!}) you should try replacing the okra with green beans. Supper yummy!
