Chicken Enchilada Ring
Ingredients:
2 cups cooked chicken
1/4 cup chopped block olives
1 cup cheddar cheese
1 small can chopped chilies, undrained
1/2 cup sour cream
1 package taco seasoning
2 rolls of crescent rolls
1 small chopped tomato
1 lime (juice)
2/3 cup finely crushed tortilla chips
1. Chop chicken and add olives, cheese, chilies, sour cream and taco mix. Seed and chop 1 tomato and add 2 tablespoons lime juice; add to chicken mixture. Reserve 2 Tblsp. crushed chips and add remaining chips to mixture.
2.Unroll crescent dough and separate triangles. Arrange on round baking stone or cookie sheet making a circle with wide ends OVERLAPPING in the center and points toward outside. ( I did lightly spray oil on the cookie sheet I used). There should be a 5 inch diameter opening in the center.
3. Spread chicken mixture evenly onto widest end of each triangle.
4. Bring points of triangles up and over filling and tuck under wide ends of dough at the center of the ring.
Sprinkle with 2 Tblsp. crushed chips. ( I put shredded cheese all on top!)
5. Bake @ 375 for 20-25 minutes. Garnish with tomato and serve with salsa and sour cream.

Pampered Chef has a recipe really close to this. It is so yummy! Everyone in my house loves it. I've even tweaked it to make more italian, served it with marinara sauce & they loved it that way too!

I made this tonight but used canned chicken. Yummy, thank you!!!
I just put it in the oven and added a can of black beans to the mixture. It's smelllin' up the house! YUM!

This and the chocolate cake in the same post are standards in my house! I use a can of Rotel instead of the tomatoes and chilies. I then only use 1 TB of seasoning and 2 TB of mayo in place of the sour cream....a little variation on the Pampered Chef original! Love that you can make this night before and then put it together and bake the next day if needed.
I make this same thing only it's a Turkey Cranberry Ring... always a huge hit!!
½ C. chopped celery
3 T. chopped parsley
9 oz. container deli turkey
½ C. craisins
1 ¼ C. mozzarella cheese
½ C. mayo
4 T. Dijon mustard
Salt and pepper
2 cans crescent rolls
1 egg white
Mix everything in bowl (aside from egg white and crescent rolls of course)
Lay crescent rolls in sun shape, points facing out
Lay mixture on thick part of ‘sun’
Fold points in
Dab top of ring with egg white and sprinkle with a little extra cheese
Bake 25-30 min at 375
I made this tonight and we ALL loved it!!!! I recommended it to everyone I know and will definately make it again. When i was preparing it I didn't think it would fill us up but it was more than enough for 4 adults
I just took this to a girlfriend who is on bed rest in the last part of her pregnancy and she said "oh my gosh is this from Kelly's blog?" I started laughing. I think *everyone* reads your blog!!

Question for anyone-- do you think you could make the mixture the night before and so all you have to do is place in the crescent roll the next day? Or will it be too soggy (chips, etc)?
My husband was just saying last night that he wanted to make enchiladas. This looks awesome - we'll have to give this a go!

Thanks for the great recipe! I was scrolling through these recipes and my husband goes "Wait! What's that Chicken Enchilada Ring? I want that for dinner tonight!" Lol. Then he took a nap and told me that he woke up craving it. We had to go to the grocery store to pick up a few things, and now it's baking in the oven! Yumm!
