Paula Deen's Hurry Up Chicken Pot Pie

This is sooooo easy and great for a cold night or when you need comfort food!


* I left out the egg - since Harper is allergic so I think you could too - it was GREAT without it.


Ingredients

  • 2 cups chopped cooked chicken breast
  • 2 hard-boiled eggs, sliced
  • 1/2 cup thinly sliced carrots
  • 1/2 cup frozen green peas
  • 1 (10 3/4-ounce) can cream of chicken soup
  • 1 cup chicken broth
  • Salt and pepper, optional
  • 1 1/2 cups instant biscuit mix
  • 1 cup milk
  • 1 stick melted butter

Directions

Preheat oven to 350 degrees F.

In a greased 2-quart casserole, layer the chicken, eggs, carrots, and peas. Mix the soup, chicken broth, and season with salt and pepper, if desired. Pour over the layers. Stir together the biscuit mix and milk, and pour this over the casserole. Drizzle butter over the topping. Bake until the topping is golden brown, 30 to 40 minutes.

looks delicious, but that is chicken PIE my firend, chicken pot pie is noodles potatoes and chicken in a thick chicken gravy...PA Dutch at it's finest! :)

There must be different versions depending on where you live - but in the south - this what we called chicken pot pie. :-)

I am a little put off by the hard boiled egg part.....Did you notice them in the recipe? I can't figure out what the taste/texture would be! I have seen her make this on her show and it looks yummy, but I laways hesitated with the eggs!

My mom makes a similar version that we call "Chicken Pie" because she leaves out the veggies. She does include eggs in it, and I've never noticed it being an overwhelming taste. I will definitely be trying out this version for my first attempt at making Chicken Pot Pie. Thanks for the recipe, Kelly!

I was just going through your recipe sight and saw that you share the love for Ro-tel!!! And I actually just finished making one of our favorite dishes with ro-tel! It's a chili... but more of a taco chili! It's awesome! You should definitely try it! (but I think the recipe is too long to leave as a comment! I will have to email it to you! :) The chicken pot pie looks great too... but I am not so sure abt the eggs either!! Have a great day!

this is totally my go to recipe. with little kids in the house we always have just a small amount of "leftover veggies" in the fridge. sometimes i use ready made pie crust, and all my leftovers (potatoes, corn, carrots, green beans, peas, whatever) and it is great!!

Yum! We also have a recipe from a dear friend for a chicken pot pie type dish. She made it for us on the night we came home from our last D & C. It was great!
We make it in our crock pot and it's basically the same :) YUMMY!

Looks good, minus the egg. Is that a southern thing--putting a boiled egg in your pot pies? I've never heard of it.

KAL071203, what you are talking about we call that chicken ala king in the north. Kelly we call your dish pot pie in the north too.

Kelly - I'm so glad you posted this! I've been wanting to try this recipe forever, but I was a bit skeptical of how it might turn out since I consider myself a chicken pot pie purist. I made it last night (also minus the egg) and it was so good!

I think that the instant biscuit mix means Bisquick, which is a baking mix for making pancakes, waffles, biscuits, etc. Maybe there's something similar in Australia.

I noticed your Ice Cream recipe with no eggs. Here's another one for you to try that is really yummy! I remembered the old traditional Orange Crush recipe and began experimenting. Here's a Vanilla I came up with and it has become my family's new favorite.

2 Liter bottle of Cream Soda
3 Cans Eagle Brand Milk
2 Tbls. vanilla

Mix and freeze in your electric ice cream freezer. Super easy and delicious!

Variations include -
Strawberry: Use Strawberry Crush and add (thawed and mashed)10oz. pkg. of frozen, sweetened strawberries

Peach: Use Peach Nehi Soda and add a Lg. can peaches w/juice, chopped

Enjoy!

See and this is the reason I love Paula Deen, she knows and uses cream of crap. IE chicken, mushroom, celery etc. THis is my dinner tonite thanks to you!!!! I cheated and used veggie mix in the can cause that is what I had on hand!
