Mexican Chicken (a.k.a. King Ranch Chicken)

This recipe is SO quick, easy and good. It's great for your family or for taking to a potluck or a family needing a meal. YUM, YUM!

INGREDIENTS:

3-4 chicken breasts, boiled and cut into bite size pieces
1 can cream of mushroom soup
1 can cream of chicken soup
1 can rotel
1-2 cups cheddar cheese
Package of corn tortillas (small)

Tear the tortillas into small pieces and line the bottom of a pan. Mix together the soups, rotel and chicken and pour on top. Top with cheddar cheese. Bake at 350 for 30 minutes or until cheese is bubbly. Seriously - it's that easy!

I usually serve with spanish rice (just a rice-a-roni mix) and/or a green salad

I love this recipe too! Mine also calls for chopped onion and green pepper. You saute them for a few minutes in the frying pan and add them to the chicken, soup, and rotel mixture. It adds a few more veggies and in reality you could all whatever you wanted...red peppers, mushrooms, etc. Just a variation!

In my variation of this I use cheese Doritos instead of the tortillas. It really adds some flavor and texture. I put a layer on the bottom and then when there is about 3 or 4 minutes baking time left I add a layer on the top. Just watch them because the ones on the top will burn quickly. This is a great recipe!

Love this recipe! I use our pizza cutter to cut my tortillas; its faster than tearing them!

One of my favorite recipes. Did you see Martha Stewart last week when she and guest were making chicken enchilada casserole? Guest was pouring the soup in a bowl and Martha said "what is that yellow stuff", guest said "cream of chicken soup" Martha said "you are kidding me, I have never seen that before" I nearly fell over!!! Never seen cream of chicken soup? It was so funny.

Oh my gosh - I thought this was a Louisiana recipe! Did you know that in Florida people don't even know what Rotel is?!!! So sad.

Tiffany said...

Made this tonight for the family. Loved it!! Have to admit I had to look up what the heck Rotel was on the internet....and formulate my own with the stuff I had in the cupboard. My 10 year old is not a fan as it took him over an hour at the dinner table to finish!! Oh well, can't please them all.

I was looking through the recipes and they all look so great. I have to admit, we do not usually use "sticks of butter" in any recipe....how do you all stay so thin!!

Kelly, it cracks me up that a lot of people don't know what Ro-tel is (I get that a lot on my blog, too!). It's such a staple in our house, I don't know how anyone can cook without it!! This dish is a regular in our household. We just had it the other day, in fact : ) I like to use flour tortillas with mine (I'm not a big fan of corn tortillas)...I also like the idea of using Doritos. I'll have to give that a try sometime!

Hi Kelly
If you like a variety of recipes take a look at http://mennonitegirlscancook.blogspot.com/ it has a lot of really scrumptious recipes.
I too have to admit I have no clue what Rotel is.
Thanks for the recipe.

As a South Texas girl I was raised on King Ranch Chicken. An easy variation... grab a rotesserie chicken and just shred it. I use flour tortillas instead of corn tortillas. I've also subbed ground beef for the chicken and it's really good!

Thanks for the recipe! I tried it for supper tonight and it was so good! The grocery store I went to didn't have corn tortilas, so I used corn chips instead. Yummy!

My mom makes this with chips instead of tortillas and it's so good. Glad to know I could use tortillas if I needed to. Actually, this was one of the meals we made while we were at the beach last week because it's so easy.

I can't wait for more of your ideas!

As a fellow southerner, I do not understand how you can NOT know what Rotel is! It's a staple in my pantry! And...we're making this tonight!! I SO can't wait! The only variation we're doing is that we're cooking the chicken in a crockpot with cream of chicken soup and cheddar cheese soup (instead of mushroom) and then shredding it!

Deena said...

I made this last night and it was awesome. I added sour cream to the top once I put it on my plate and it was quite yummy. I can't wait for leftovers for lunch today! My stomach is growling...

Lauren said...

im making this in the crock pot tonight! dinner would never get made if it wasn't for my crock pot, you should post some slow cooker recipes sometime!

Anonymous said...

I made this the other night. I put all the liquid ingredients in the crock-pot along with chicken that I browned first on the stove. I also added a can of enchilada sauce. I let the chicken cook all day and then transfered it to a baking dish- adding the tortillias and cheese. It was sooo good!
PS a recipe very similar to this is in a paula deen cookbook I just got yesterday!

Kelly, i just wanted to tell you we had this tonight and it was soooo goood! Oh my, i loved how creamy and cheesy it was. Def. one of our favorite recipes now. Thanks so much for sharing it. Please continue with the yummy recipes!

I have been making this for my husband since before we were married and he always asks for it when he's in Iraq.

I do it a little differently.

I use:

1 can cream of chicken
1 can corn
1 can peas
1 can cream of celery
tortilla shells (cut into medium size hearts) yes corny i know
1 bag of Mexican cheese
1 can rotel

I mix it all up in a bowl layer the dish w/ the heart shaped tortillas, fill it up with the mix, then add one layer on top of the hearts, and finally add some cheese.

I usually make cherry cobbler for dessert to compliment the yummy taste :)

Hey, Miss Kelly! Wanted to say thanks for the new idea from a fellow NWA girl. My little boy has been in isolation due to treatments for leukemia for 5 weeks straight now and it's tough to get creative with new ideas. We all tried it for dinner last night and it was so yummy! Thanks for sharing!

I made this for dinner tonight...and it was SO GOOD! I added some green peppers, olives, and used fat-free soup. I'm not sure that the fat-free made it that much "better" for you, but it still tasted great!

I did my own variation tonight as well...We thought it turned out FANTASTIC!

- I changed the cream of mushroom to a second can of cream of chicken (not mushroom fans in this house!)
- I used flour tortillas since I had them.
- I added a can of drained black beans.
- Added a package of taco seasoning.

It really spiced it up! Delish!

Oh, my goodness, would y'all just tell the Northerners...Rotel is canned tomatoes and green chilies. It's a Texas (and I guess Southern) staple. If you can't find Rotel, use a can of diced tomatoes and a can of chopped green chilies. You'll get more veggies, but that is a good thing! Theoretically you could also use a jar of mild salsa--I think the Rotel can is about 12-13 oz, so just use equal measure. I grew up on King Ranch chicken...it's a meal that saves the mama's life. :)

Guys, I need some help! How big are the cans of soup you use?? Do you use condensed and if, do you add milk/water? The dish turned out pretty soupy, but tasty! I used flour tortillas but since they got really soft I might try it with tortilla chips next time. my bf thought you were supposed to do it with chips anyway, is that right? Thank you in advance for any tips!! Greetings from Canada! (where I didn't find Rotel either, haha :-))

After reading your comments, I think this is what we will have for supper tonight.

For those of you asking, Rotel is a brand name of a soup sized can of diced tomatoes, green chiles, and the juices from them. It is a very popular thing here in the South and is used in so so many different recipes. The most popular and one of the oldest recipes that uses it is actually referred to as Rotel, which is a 1 pound block of Velveeta cheese melted together (usually in microwave, stirring every 1 minute or so intervals) with a can if Rotel to make a queso/cheese dip. That's the basic base...from there some people add cooked ground hamburger meat or sausage, spices, other cheeses, etc...the possibilities are pretty endless. Most of us Southerners grew up on Rotel cheese dip! In grocery stores, Rotel is found on the aisle with canned vegetables, specifically with other canned tomato things (stewed tomatoes, crushed tomatoes, etc.). Most major grocery stores (around here at least) have a generic version...it will just say diced tomatoes and green chiles on the label. Hope this helps!

I made the Mexican Chicken last night. As I'm Australian, I had never heard of rotel but thanks to the previous commenters I worked out it meant tomatoes. So I cooked it, it was easy, my husband went back for seconds and there was plenty leftover to freeze and have another night when I don't want to cook. Thanks Kelly!!!

Hi Kelly, Love this recipe too! I made this tonight with a couple of changes. Instead of the tortillas, I used tortilla chips. I did a layer of chips, Mexican blend cheeses, half of the chicken mixture, tortilla chips, Mexican blend cheeses, other half of chicken mixture, tortillas chips, and then topped it off with the Mexican blend cheeses. My husband is so pleased. Thank you so much for this recipe and I hope you don't mind the variation. Deb

Almost forgot, next time we are going to layer in salsa on the chicken mixture. Meant to this time and forgot!
