Ingredients
- 1 (15 ounce) can artichoke hearts, drained and chopped
- 3/4 cup grated Parmesan cheese
- 3/4 cup mayonnaise
- 1 tbls garlic salt
- 4 skinless, boneless chicken breast halves
DIRECTIONS
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium bowl, mix together the artichoke hearts, Parmesan cheese, mayonnaise, and garlic salt. Place chicken in a greased baking dish, and cover evenly with artichoke mixture.
- Bake, uncovered, for 30 minutes in the preheated oven, or until chicken is no longer pink in the center and juices run clear.

ReplyDeletewe made this tonite and im wondering if its supposed to be a tsp of garlic salt not a tbls? It was soooo salty it looked like it would have been good and want to try it again. Let me know if it was a mistake? :)
ReplyDeleteWe eat a lot of chicken at our house. One of my favorite chicken to make is BBQ chicken. It isn't made with BBQ sauce though.
ReplyDeleteHere is all you have to do:
Take BBQ chips (I use plain chips and add a lot of chili powder, garlic powder, lemon pepper, and onion powder) and put them into a baggie (I use a ziploc bag). Smash the chips up into small bits. Melt some butter in the microwave.
Then roll the chicken in the butter and then put it into the baggie and shake it up. I always make sure that all the chicken is covered in chips. Then put the chicken in a baking dish. After I have all my chicken coated with butter and chips I pour the leftover butter and chips onto the chicken. Bake in the oven. I set my oven anywhere between 350-400 degrees. Bake until done (usually takes about 1 hour).

ReplyDeleteI made this the other night, but added frozen chopped spinach and sour cream to the mixture (to tame down the parma -- and I'm Italian ... go figure!), then topped it off with slices of mozarella until it bubbled. I served it with a dollup of Daisy sour cream.
It was like eating spinach artichoke dip without the chips. And it was DE-LISHHHHHHH!

This looks so yummy and so easy. I can't wait to try it. I wonder if it would be good if you put spinach in the topping too and made it sort of like a spinach and artichoke dip on top. It looks really good in the picture too!

ReplyDeleteI made this tonight & agree with Michelle Bradley that it was really salty. BUT it was still good (when your pregnant salty isn't a bad thing) & I think I will try it again with a tsp instead of a Tbls. Thanks for the recipe!

ReplyDeletewell, i made artichoke chicken last night for the hubby and i and we loved it!!! very very good...i bet you could use the artichoke mixtured for other things too?! what do ya think? any ideas? i thought about putting it on some sort of crackers or something as an appetizer?! i dont know...thanks again for the yummy recipe
ReplyDeleteI made this for dinner tonight, and my husband actually LIKED it!! I can't tell you how many times I have made just the topping as an appetizer dish and he always turned his nose up to it. I was skeptical, but went ahead anyway. He's even taking leftovers to work tomorrow! Thanks for a great recipe!

ReplyDeleteI tried this recipe with Miracle Whip instead of Mayo and I loved it! I also got a garlic marinated chicken instead of using garlic sauce. This recipe was a big hit, I will definately cook it again.
ReplyDeleteGreat recipe..just one thing you may want to correct...I don't think 1 Tablespoon garlic salt is right..I used 1 Tablespoon when making it, and it was overwhelming. When I looked up the identical recipe on allrecipes.com, it said a "pinch" of garlic pepper. Either way, thanks for passing on this recipe Kelly!

ReplyDeleteServed tonight, but added spinach (about 2/3 box thawed and drained) and a little more mayo. Not as creamy and saucy. Maybe hsould have added even more mayo. But it was SO yummy. I was going to serve over egg noodles, but when I saw it was thicker and not saucy, I added a spaghettic sauce to the noodles. It was a great side to the spinach/artichoke chicken.
Husband REALLY loved it tonight! just wanted to FYI for all those wondering baout adding spinach...it was a hit!
