Beef Enchiladas
1 lb hamburger meat
1 small onion, chopped
1 can of chopped black olives
1 can of cream of mushroom soup
1 can of Enchilada sauce
8 oz of shredded cheddar cheese
6-8 flour tortillas
Brown the meat and saute the onions in with it. Once that is done, add in the olives and let it heat and then add in 3/4 of the cheese and let it melt - mix it all together. Fill tortillas with the meat mixture and roll up. Combine the mushroom soup and enchilada sauce and pour on top. Top with remaining cheese. Bake at 350 for 30-40 minutes.

That looks delish! I've never heard of adding in cream of mushroom soup - I'll def have to try it soon!

I know it will be a couple of years but still fun for adults during playdates between now and school....They are so easy to make.
I made these last night(minus the olives) and they were amazing! I have also made the butterfinger cake and it was super good!

ReplyDeleteI made these the other night and we both loved 'em! So simple and delish! I used La Preferda Mild sauce and accidentally bought one can of chopped olives and one can of sliced.. so I just used both & it was great! I know this will be a staple for us. Thanks for the recipe Kelly!
ReplyDeleteWonderfull. I have been almost a year in Argentina, and I have stayed in an apartment in buenos aires, so I had a mexican roomate and an argentinan one. And once they made asado with enchiladas. Was great.
