CAKE BALLS
This is super easy and you can make it any kind of variety you like. I've seen yellow cake and chocolate icing and chocolate and chocolate. But being the good Southern girl I am - I LOVE red velvet cake so I thought this would be good. (Jamie - you would LOVE these!)
When it's still warm - crumble it up in a bowl and mix in a can of frosting (I used cream cheese with the red velvet!)
IMPORTANT STEP: Refrigerate the cake and frosting for about an hour before you start making balls!
Melt almond bark (either vanilla or chocolate - depending on your cake) and dip balls in the bark. You could use toothpicks or a fork - but I used this egg separator and it worked GREAT!IMPORTANT STEP: Refrigerate the cake and frosting for about an hour before you start making balls!

ReplyDeleteMy sister makes these, but adds a bit of peppermint extract to the bark, and tops them with crushed candy canes - delish! (She keeps the red velvet, cream cheese icing, and white bark part the same...)

These are really good! My mom makes something similar... She crumbles a package of oreos, then mixed a block of cream cheese with the oreos, makes them into balls, and then dips that into the melted choc. - it's super good and easy!

ReplyDeleteI think I am going to try this tomorrow for a Christmas treat for work on Monday! I am going to use peppermint extract and candy canes to add a little extra to the vanilla bark!

I have the SAME egg separator...I use it to scoop out and strain pickles, olives and other goodies out of jars. (If only they had a TINY one for maraschino cherries and such - the big one just doesn't fit in the jar! LOL) I love this idea to use it for dipping stuff into chocolate/candy coating!
ReplyDeleteI made this for a party that I hosted at my house, but used strawberry cake and icing. They were a hit. It made a lot, so I brought my leftover to some of my co-workers. They were delicious!

ReplyDeleteI just tried making these--they look and sound SO YUMMY! I've never melted the bark before and for some reason it didn't get runny. So I couldn't really coat the cake balls--hope that makes sense. My bark just sort of was "thick" you could say. In your picture yours looks thin. Do you happen to have a trick you used? Did you melt your bark on low setting for a long time? I'm just curious. I want them to turn out just how yours did!!!

Jen S. If your bark or chocolate is too thick for whatever you want to do add oil to thin it. Start with a very small amt. & mix well. You can keep adding if you need more, but you can't take away if you add too much! I have found that olive oil enhances the flavor. NEVER add liquid such as water, mil, etc. It will cause your chocolate to seize. If this happens add oil to remedy the situation.

If you let the cake cool before you break it up you dont have to wait an hour to make the balls! :) These are soo yummy and easy to make!
